Season steaks with salt and pepper. Next, evenly distribute the steak rub on each steak and allow to sit and marinate for at least an hour.
On a preheated grill, cook each steak for 6 to 8 minutes on each side or until they reach your preferred cooking temperature.
Remove from grill and let rest for 5 minutes.
When steaks are done resting, thinly slice them along the grain.
Garnish gracefully with chimichurri and serve.
