In a pan over medium heat, saute onion garlic, pepper, thyme with oil. Once onions are translucent add callaloo and stir. Cover pan and place it over low heat, allow to cook for 10 minutes.
Add scotch bonnet pepper, Adjust seasoning with salt and pepper if needed. Let simmer for 10 minutes.
Serve with rice, boil banana, and/or fried dumpling.
