In a large pot, heat water and place the chicken wings. Allow to boil for 1/2 an hour, squeeze 1 lime in the pot. Then drain and rinse off. Repeat this process once more.
Once done, in the same pot place the wings, onion, celery, bay leaf, lime, allspice. Pour enough of water in the pot until it cover the chicken wings.
Bring to a boil. Season with salt and Grandma A's pepper sauce.
Then add potatoes. Boil again until potatoes are soft. Adjust seasoning if needed.
Serve with Johnny cake.
