In a large pot over medium heat add oil.
In a bowl season the beef top round with salt and black pepper. Once the oil is hot sear the beef until browned.
Add potatoes, carrots, bell peppers, onions, corn, garlic, oregano, paprika, vegetable stock and water. Ensure that the liquid covers the vegetables.
Simmer for 20-30 minutes or until the vegetables are fork tender. Adjust seasoning if needed with salt and black pepper.
