Preheat oven to 375 degrees F.
Mix together dry rub ingredients in a bowl.
With a kitchen shears, starting at the neck cut along the side of the chicken’s backbone straight through to the butt. Lay the chicken out flat, flip it and sprinkle a quarter of the rub on the inside. Take the remainder of the rub and season the meat generously. Place the chicken into a baking dish and let bake for 45-50 minutes (depending on the size). Remove from the oven let rest and serve.
