Guinness Irish Mac & cheese

Yields4 Servings

 1 tsp Onion powder
 1 tsp Garlic powder
 8 oz Elbow macaroni
 14 oz Cheese
 2 tbsp Flour
 2 tbsp Butter
 ½ cup Heavy cream
 1 cup Breadcrumbs
  cup Guinness (optional)
 1 ½ cups Milk

Preheat your oven to 350 degrees and bring a large pot of salted water to boil.

Once boiling, add in the pasta and cook for 3 minutes. Drain and set the pasta aside.

In a large saucepan over medium high heat, add in 2 tablespoons of butter and once melted, add in flour, whisking constantly, cook for 1 minute.

Pour in your milk, cream and Guinness (optional) and while continuing to whisk, bring to a low boil.

Add in your seasonings and continue to stir.

Remove from the heat and whisk in 3/4 of the cheddar cheese.

Whisk to combine and once all the cheese is melted, check for seasoning and flavor.

While you are preparing the sauce, add 2 tbl butter to a skillet over medium heat and once melted, add Panko breadcrumbs. Stir to combine and lightly toast. Remove from heat when they are lightly browned.

Combine the pasta and the cheese sauce and pour into a baking pan.

Sprinkle with the remaining cheese and buttered breadcrumbs and bake uncovered for 25 minutes.

Remove from oven and let set for 5 minutes before serving.
