Using a pair of kitchen scissors, remove the backbone of the whole chicken. Ensuring that it is properly cleaned as well.
With the jerk rub and paste generously rub into the chicken. Also rubbing the seasoning under the skin.
Allow chicken to marinate for 2-3 hours.
Preheat the grill to 325 degrees F, then place the chicken rib-side down on the grill. Cook until the internal temperature reaches 165 degrees F. Remove from grill and allow to stand for 10 minutes.
