Heat a pot over medium heat add oil, thyme, bay leaf, garlic, onion, celery and pumpkin. Cook in oil for 5 minutes, continuously stirring.
Add water to pot.
Season with salt.
Bring pot to a boil.
Stir in rice. Let water evaporate just until it starts to bubble on the surface of the rice.
Turn heat to low and cover pot. Let simmer for 20 to 25 minutes.
