Preheat the oven to 350.
Cut pumpkin into small cubes and arrange on a baking sheet. Toss the pumpkin with oil, salt and black pepper.
Roast the pumpkin in the oven until golden and fork tender (20-25 minutes). Then set aside to allow it to cool.
In a large bowl, combine the roasted pumpkin, red onions and your favourite dressing. Once done place the mixture on a bed of arugula. Top with crumbled feta cheese (optional).
