In a pot over medium heat, bring water to a bowl. Also set aside a bowl with ice water.
Add shrimp to the boiling water and allow them cook until they are pink and opaque.
Drain shrimp in a colander, then transfer to the ice water for a few minutes. Once cool, chop the shrimp and set aside in a bowl.
In the bowl with shrimp, add lime juice, lemon juice, tomatoes, onions, cilantro & jalapeño. Season to your desire with salt & black pepper.
Once you're ready to serve stir in the avocado.
